1 box of your favorite cake mix 1 can of vanilla frosting Green food coloring 3-3/4 cups (10-oz. pkg.) coconut flakes Mini-marshmallows and jelly beans Directions 1. Prepare cake mix according to package directions and bake the cupcakes. 2. Cool cupcakes and frost with white frosting. 3. Tint the coconut a bit at a time. Mix a few drops of green food coloring in a teaspoon of water and pour over 2 cups of coconut flakes. Stir until evenly tinted. Repeat if you need more. 4. Cover each cupcake with tinted coconut flakes for the grass. Place mini-marshmallows and jelly beans on top. Any favorite treat such as M&Ms or chocolate kisses can be used for the garnish. |
