Iced tea was invented by accident in 1905. It was a hot day at the World's Fair in St. Louis, Missouri, and Richard Blechynden's tea concession was not doing well. Thinking quickly, he added ice and created a beverage that has become an American favorite. Almost any tea you like can be poured over ice, but some teas change pH levels in cold water. If your iced tea gets cloudy, just slice up some citrus fruit and add it to your glass. Lemons, limes or oranges will balance the acid content.
