1 cup plain yogurt 2 large cucumbers Fresh mint (to taste) Optional Seasonings: 1 Tablespoon lemon juice 2 teaspoons chopped garlic Salt and pepper DIRECTIONS 1. Peel cucumbers and cut in half lengthwise. Scoop out the seeds with a spoon. Slice thinly. 2. Stir up the yogurt and spoon it into a mixing bowl. Add some chopped mint plus any other seasonings desired. Mix well. 3. Stir in the sliced cucumbers last. Cover the bowl with saran wrap or foil. Chill for at least an hour before serving. ENJOY! |
