BELGIAN WAFFLES
INGREDIENTS

2 cups all-purpose flour
2 teaspoons baking powder
2 tablespoons sugar
1 tablespoon vegetable oil
2 cups milk
3 eggs, separated
2 teaspoons vanilla
pinch of salt
fruit or jam
whipped cream or cool whip




DIRECTIONS

1. In a large bowl, combine the flour, baking powder, sugar, oil, milk and egg yolks.

2. In a medium bowl, beat the egg whites until they stand in soft peaks. Fold the egg whites into the batter. Don't overmix!

3. Measure out 1/2 cup (or the amount recommended for your waffle iron). Pour the batter into a hot waffle iron. Cook for about 2 minutes. Repeat for the rest of the batter. This should make 8 waffles.

4. Top with your favorite fruit or jam (raspberry and strawberry are the most popular). Add whipped cream or cool whip and serve hot.
