SPECIAL NOTE! The earlier Dutchman used barrel molasses in this recipe. The closest equivalent on the market today, is Brer Rabbit. Other molasses will bake crunchy, almost like taffy. This original recipe was contributed by Bonnie and dates back to her great-grandmother's day. |

1 8" unbaked pie shell Topping: 1 1/2 C flour 1/2 C sugar 1 tsp. baking powder 1/2 tsp salt 1/4 C shortening Bottom: 1/2 C Brer Rabbit molasses (orange label, mild flavor) 1/2 C. boiling water 1/2 tsp. baking soda DIRECTIONS 1. Preheat oven to 400 degrees F (200 degrees C). 2. Mix all topping ingredients together, squeezing and crumbling to make crumbs the size of small peas. Set aside. 3. In another bowl, dissolve baking soda in boiling water. Add molasses. Stir well. 4. Pour into unbaked pie shell & add crumb topping. DO NOT BLEND THE TOPPING WITH THE MOLASSES MIXTURE. 5. Bake at 400 degrees F for 15 minutes; then at 350 degrees F for 35 minutes. Pie will keep well in the fridge for a week, or it can be frozen. ENJOY! |
