4 ripe avocadoes (must be ripe - peel and core) 2 limes (squeeze juice - fresh is best-not bottled) 6 green onions (the long skinny ones chopped thin) 2 small tomatos (diced) 1 garlic glove (smash it thoroughly) Drop of Tequila 1/2 cup cilantro (chopped fine) 1/2 cup green salsa 1/2 teaspoon ground roasted cumin salt and fresh ground pepper to taste 1/2 teaspoon chili pepper Dash of tabasco TOPPING 1/2 cup sour cream 1/2 cup cheddar cheese, grated 1/2 cup pitted black olives, chopped DIRECTIONS Mash the avocadoes with a potato masher. Using a fork, whisk in the remaining ingredients. Place the guacamole in a medium serving dish. Cover the entire surface with a layer of sour cream, so that there is no green showing. Sprinkle the grated cheese on top. Sprinkle on the olives. Cover the bowl with plastic wrap and refrigerate it for at least 1 hour before serving. Serve with the Authentic Mexican Nachos ENJOY! |
